Gnocchi Skillet with Sausage and Tomatoes
This is going to be added on to our regular rotation of meals - it was delicious! This recipe below served our family of 4 (2 adults, 2 kids) with a little bit leftover. It was super simple and didn't require many ingredients.
Gnocchi Skillet with Sausage and Tomatoes
Ingredients:
- 2 lbs of gnocchi
- 13 oz Turkey Polska Kielbasa, sliced into half circles (or full circles if you don't have kids to worry about choking) (Note: you could substitute for another type of sausage if you wish)
- 1 pint of grape tomatoes (sliced in half)
- 1 oz of fresh basil (chopped into large pieces)
- 2 tbsp of olive oil
- 1 tbsp of minced garlic
Directions:
- Cook gnocchi according to package directions (bring pot of salted water to a boil, add gnocchi, cook for a few minutes, and drain after cooked).
- While gnocchi is cooking, heat a large skillet over medium heat with olive oil. Once hot, add sausage and minced garlic and cook until it begins to brown (about 3-4 minutes).
- Push sausages to a pile at the edge of the skillet and turn the heat up to high. Add the tomatoes, skin down, to the skillet and cook until they start to blister (about 2-3 minutes).
- Stir the sausage and tomatoes together and cook for another 2 minutes or so.
- Stir in gnocchi and cook until it is all combined.
- Remove from heat and stir in basil.
- Serve and enjoy!
