Pumpkin Spice Ginger Snaps

The fun thing about the weather turning colder, is that I look for fun baking recipes.  Hershey's has come out with a new kiss called pumpkin spice...yum!  It's delicious eaten alone, but it got me thinking about cookies I could make with it.  I decided a ginger snap with this delight on top was just the ticket :-)

Ingredients:
1 1/2 sticks butter, softened
3/4 cup sugar
1 large egg
1/4 cup dark molasses
1/2 teaspoon ground cloves
1 teaspoon ground ginger
1/2 teaspoon freshly grated nutmeg
1 teaspoon cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
2 1/4 cups flour
3 dozen pumpkin spice Hershey's kisses  - peeled and ready to place on top the cookies
1/4 cup sugar in a bowl  - used to roll cookies in before baking

In a large bowl, mix butter, sugar, egg, and molasses.  Add dry ingredients, stirring in flour last.  Chill dough for 30 - 60 minutes.  While this is chilling, you can unwrap all the kisses.

Preheat oven to 375 degrees.  Roll dough into 1 inch diameter balls and then roll in sugar.  Place on a cookie sheet about 2 inches apart.   Bake for 7 minutes.  As soon as you take the cookies out, place a pumpkin spice kiss in the center of the cookie.  Allow cookies to cool and enjoy!
