Chicken Supreme
I received this recipe from a good friend of mine (Thanks Judi!). It's a winner for two reasons:
1. It's pretty simple to prepare.
2. It's always a hit at dinner.
Ingredients
4 whole chicken breasts
1 can cream of chicken soup
1/4 Cup water (or dry white wine)
3 cups or more seasoned bread crumbs (I like to put Stove Top Stuffing in the food processor to make the bread crumbs)
1/3 Cup melted butter
2 Cups shredded Swiss cheese
Put 1 cup of bread crumbs on the bottom of a 9 x 13 pan. Arrange chicken on top. Sprinkle shredded Swiss cheese on top of each chicken breast. Mix soup and water (or wine) and spoon over chicken. Sprinkle more seasoned bread crumbs over the chicken breasts and then drizzle with butter.
Bake 1 hour at 350 degrees. For the first 30 minutes, cover the pan with foil, for the last 30 minute leave open. Ensure that the inner part of the chicken breast has reached 180 degrees before serving.
