Banana Bread

When it's cold outside, it's fun to make nice warm comfort food.  I love the way banana bread fills the kitchen with that warm bread smell.  The recipe I use is one that is a melding of several recipes I've seen over the years.  Most banana bread recipes do not use any spices, but I've incorporated cinnamon, nutmeg (grated fresh), and vanilla in the recipe I like the most.

Ingredients:

2 Mashed Bananas
1 Cup Sugar
3/4 Cup Canola Oil
2 Eggs
2 Cups Flour
1 tsp. Baking Soda
1/2 tsp Salt
1 tsp Cinnamon
1/4 tsp Nutmeg
1 tsp Vanilla

Heat oven to 350 degrees.  Combine all ingredients with a potato masher until well blended.
Please paper muffin cups in each muffin tin and use an ice cream scoop to put equal amounts of batter in each tin.  Bake at 350 degrees for 21 minutes or until the top springs back when lightly touched.
Makes approximately 12 muffins.

Note from Kelly: You can also make the same recipe in a baking dish for banana bread bars (or basically cake). I made this same recipe but sprayed a baking dish with cooking spray and cooked it for about the same amount of time 20-25 minutes at 350 degrees. Another addition that can be made is adding a cup of nuts (crushed walnuts or almonds) to the batter before cooking. I also added brown butter frosting, which was delicious!
