Spinach Salad with Walnuts, Raisins, and Blue Cheese
This salad is incredibly simple and easy to make but the flavors combine really well, which is why I am posting it. This is our go-to salad and a regular lunch.
Spinach Salad with Walnuts, Raisins, and Blue Cheese
Ingredients:
- 2 cups of spinach
- 2 tbsp of chopped walnuts
- 1 tbsp of blue cheese
- 2 tbsp of raisins
- Vinaigrette dressing
- 5-6 baby tomatoes (optional)
- 1/4 of a chopped cucumber (optional)
Mix all of the ingredients together and enjoy!
We typically add tomatoes and cucumber in the summer, late spring, and early fall when the veggies are fresh and leave them out in winter because it is hit or miss whether or not they will be good.

These are the approximate ingredient sizes to make one large serving -- however, they can be multiplied to make it for a larger group. For a larger group, use a full bag of spinach, half of a bag of walnuts, half of container of blue cheese, about a cup of raisins, a cucumber, and a container of baby tomatoes.
